Beef Stir Fry ended up on my menu a couple of weeks ago after lengthy discussion about our weeknight dinners. As many of you could relate to, I felt like I was in a rut when it came to dinnertime during the week. One can only take baked chicken and veggies for so long!

After growing up surrounded by beef cattle, I have always worked it in to my menu more than perhaps the average girl in her 20s. Beef is tasty. And knowing where it came from makes it even better somehow.

A trip to the meat counter at HEB is generally a good exercise to get my creative juices flowing. Well on this occasion, I ventured through the meat section in its entirety. I came across packages of thinly sliced sirloin steaks that not only looked great, but were fairly inexpensive. With countless preparation options, stir fry was my choice. Not that I have ever made stir fry before, but the challenge was accepted.

For around $5 I picked up a pounds-worth. Then I hustled back over to the produce and grabbed several heads of broccoli, a bunch of carrots and a package of mushrooms. Whoa, I felt like I was on Guy’s Grocery Games or Chopped. Such a rush! Ha

Though we don’t venture into the inside isles too much, except for the baking isle of course, sometimes you have to make your way in between the shelves. On my list now, soy sauce, teriyaki, and Worcestershire. First off, finding a soy sauce that doesn’t have just shy of 1000 mg of sodium is quite the challenge. But I found one. I seem to like it so far; will share in the future if it continues to impress. Secondly, what really is the correct way to say Worcestershire?!?!

Ok now I had the meat, veggies, and sauces checked off the list for beef stir fry. Now to find some sort of noodles or rice to complete the dinner. Being in the international isle, I stood in front of the noodle packages for 5-10 minutes. With minimal English on the packages and not eating at Asian restaurants all that often left me lost and a little confused. There are countless options! Finally, I decided on a bag of thin noodles that said they’d cook in boiling water for 3 minutes. Unfortunately, I don’t have the name of them and forgot to take a picture of the bag! I’ll edit this post in a day or so when I am able to update!

Woohoo! Shopping complete and I didn’t forget anything on my “list”! That is a success in of itself. Now to the cooking.

The recipe is listed in its entirety below. Don’t be overwhelmed by the number of ingredients or steps. This recipe is easy. I highly recommend getting out all of your ingredients before you start just as I said in my Baking Like a Pro post. This will help you be quick from step to step once you begin the cooking.

Don’t be afraid of a smoking pan! Since you are only cooking the meat for a couple of minutes, you need it to be hot! Same goes for the veggies. I used my trusty cast iron skillet (12″) and it worked perfect.

For cleanup: I rinse pan out and try to knock off as much as I can in the sink with a sponge. Then I place skillet filled with about an inch or so of water back on burner. Allow water to boil while you use a wooden or plastic spoon to rub against remnants. If you still have stuff stuck to the bottom, pour some kosher salt in and use as a mild abrasive to break apart what is left. Whatever you do, once you have poured out water, make sure you completely dry your skillet before laying your head down to sleep that night! I am almost certain I take better care of my cast iron than I do myself!

Beef Stir Fry with Broccoli, Carrots and Mushrooms

Course: Main Course
Servings: 4
Steak Marinade
  • 1 lb thinly cut steak*
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp cornstarch
  • 2 tsp teriyaki sauce
  • 1 tsp soy sauce low sodium
  • 1 tsp oil
Vegetables and Sauce
  • 2 cloves garlic whole
  • 1 cup brown mushrooms thinly sliced
  • 2 1/3 tbsp soy sauce divided
  • 1 tbsp butter
  • 1 head broccoli 1 1/2" pieces
  • 2 large carrots shredded
  • 1 tbsp cornstarch
  • 1 tsp sugar
  • 5 tbsp oil divided
  1. Place sliced beef steaks in bowl. Add ingredients from "Steak Marinade section". Salt, sugar, pepper, teriyaki, soy, tsp oil, and cornstarch. Mix well and let marinade for 30 minutes.

  2. When ready to cook, heat 2 tbsp oil over high heat until smoking. Add whole garlic cloves and cook for 30-60 seconds until fragrant. Remove and set aside.

  3. Reheat pan until smoking again, then add beef. Spread evenly and cook without moving for 1 minute. Continue to cook while stirring for another 2 minutes. Transfer to clean bowl and set aside.

  4. Heat another 1 T oil in pan over high heat until oil begins to smoke. Add sliced mushrooms to pan. Cook mushrooms until they begin to release their water. Add 2 tsp of soy sauce and stir in 1 tbsp of butter. Toss butter with mushrooms until fragrant. Then either add mushrooms to bowl of cooked beef or to another clean bowl.

  5. Once again, heat 2 tbsp oil over high heat until it begins to smoke. Add broccoli. Cook, stirring constantly until broccoli is browned around edges, approximately 2 minutes. Add in shredded carrots. In a small bowl, whisk together 1/2 cup water, 2 tbsp soy sauce, 1 tbsp cornstarch, and 1 tsp sugar. Add this mixture to pan with broccoli and carrots until thoroughly coated. Cover and cook for 3-5 minutes until to the desired doneness.

  6. Add beef and mushrooms back to pan and stir until evenly combined. Mince garlic previously used and add back to pan.

  7. In a pot of boiling water add your favorite noodle. I used soba noodles. They required approximately 3 minutes in boiling water. Once aldente, immediately transfer drained noodles to pan of beef and vegetables.

Recipe Notes

* I used thinly cut sirloin steaks (quality grade: Select) for this recipe. The leanness of these steaks lends to the quick cooking in this recipe.

* Also be sure to slice the meat, prior to cooking, against the grain and on the bias. This will make for an easier eating experience.
