It’s just about Thanksgiving! Woohoo! While doing some research in getting ready for the holiday and all of the food it requires, I decided a Thanksgiving Recipe Roundup would be fun. So if you haven’t decided what you are making for Thanksgiving, maybe this will help you.
And shoot, if you’re reading this years from now in the spring, these recipes still would be a yummy addition to your table!
To get started, I do want to share with you three cookbooks I have been enjoying the heck out of this season:
- Half Baked Harvest by Tieghan Gerard
- Art of the Pie by Kate McDermott
- The Perfect Cookie by America’s Test Kitchen
Art of the Pie by Kate McDermott – If you’ve kept up with the blog for anytime at all, you’ve probably seen this book in several posts already. To say I love this cookbook, is an understatement. But my favorite recipes are Basic Pie Crust (I use all butter), Apple Pie, and the Angel Food Pie.
The Perfect Cookie by America’s Test Kitchen – This was a birthday gift from my lovely sister, and I must say, it has been a great add to my cookbook collection. Their “Perfect Chocolate Chip Cookie” is dare I say, perfect. I have made that recipe three times now, all in the last two weeks. My favorite thing is mixing it up, then portioning it out with my 2 Tbsp. scoop and popping them into the freezer on a cookie sheet. Once frozen, I keep them in the freezer until I am ready to bake. So now I’m always 15 minutes from fresh-baked cookies. The recipe does say that frozen cookies should take longer, but I find 10-15 minutes at 375°F does the trick.
Which are your favorite cookbooks for this time of year? Thinking about putting together a post in regards to my collection of cookbooks. The book shelf they reside on means almost as much to me as my other bookshelf that holds my most favorite westerns!
Anyhow, from time to time, I do venture on the ole world-wide-web to find a recipe or two. This past week, I was needing to gather my grocery list for the goodies I am making for a couple pre-Thanksgiving parties. Naturally of all days, I didn’t have one of these cookbooks with me. I knew a few of the recipes I was looking for in these cookbooks could be found on their website, so there my quest began. Then like all internet searches go, I found myself trapped in a never-ending google search.
Sunday, I made this carrot cake, except I turned it into cupcakes. I divided the cake portion of the recipe in half and it made 16 cupcakes. My most-trusted-taste-tester-in-the-world told me that these were top shelf good. Although I divided the cake batter in half, I chose not to divide the cream cheese icing in half. With cupcakes, I find it takes way more icing, learned that the hard way!
So now, what are you making?
Our days are dwindling between now and Thanksgiving. And you know how long the lines will be if you have to still do your grocery shopping! Of course, no matter the long lines or anxiety of making a new recipe, this is one of my favorite times of the year.
Gathering the whole family around. Sisters, cousins, aunts, uncles, significant others, parents, grandparents, and friends. Life has been filled with so many wonderful people. I’m going to spend the day enjoying the heck out of them!
